The logo can be easily changed. Just modify the $CATALINA_HOME/webapps/gridsphere/WEB-INF/images/gridsphere-logo.png (or smth. like that) file.
As far as the other stuff is concerned... try looking into .gridsphere/CustomLayout and manually edit those xml files. I don't know if other ways, other than modifying gridsphere's code, exist.
